This means you’re able to have a high level of confidence in—
- 95% of all bottle-levels reported
- 95% of all pours reported
- And, each individual pour reported will be 95% accurate (For example, if Nectar reports a pour size of 1 oz; we are highly confident that this pour falls into the range of .95 oz - 1.05 oz.)
What is the best way to use the pour data?
Action on the trends of your average pour size.
With each pour registered in your dashboard, you'll be able to see how your bartenders are pouring one day to the next, one week to the next, or even month over month.
In fact, we don’t recommend focusing on single instances of over pouring. In our experience, understanding how your staff is pouring over a larger sample set of pours will provide you with a better pulse of how much loss is occurring due to over pouring.
Here's an example:
Let's say your target pour size is 1.25 oz.
Now, let’s assume the pour data for the last 7 days informs you that your bartenders are pouring on average, 1.50-1.90 oz per drink.
Rather than focus on a handful of pours that were on the high end, your bigger opportunity is to coach them to pour closer to 1.25 oz overall (or some defined range you feel is appropriate, like 1.25- 1.45 oz).
Results: Saving you money caused by over pouring drink after drink. It really adds up!
